How can I change the color of an entire column ?

How can I change the color of an entire column, and is there a way to setup particular columns to always have a certain color ?

UltraEdit is a byte oriented text editor and not a cell (columns / rows) oriented spreadsheet program or a word proccessing program with table support. So you can not specify colors for different columns.

The only thing you can do is set 2 column markers - thin vertical lines - in the View menu.
